Because it works close to the local hardware and file system that a web browser cannot reach, it offers a clear speed and stability advantage on the shop floor, in the warehouse and at office desks where heavy data entry happens.
Packaged desktop programs are usually built around their own assumptions, not your process; they bring unnecessary modules, inflexible screens and per-user licence fees that keep climbing.
